Finnish fish soup, or What to cook with leeks

If you have never tasted leeks yet, but have long dreamed about it, now is the time to do it. Finnish leek soup will become your favorite dish. It is prepared from cod with the addition of cream, which makes the soup very delicate in taste. Recommended!

  1. Wash the fish, cut into 2-3 pieces, put in a saucepan and pour 1.5 liters of cold water. Bring to a boil and skim off the foam. Peel and wash the carrots.
  2. Put the washed onion (unpeeled), carrots, several sprigs of dill, tied with a thread into a saucepan with fish and cook over low heat under a lid for 1 hour. Strain the broth. Separate the fish fillet from the bones and cut into small pieces.
  3. Wash the potatoes, peel and cut into slices. Bring the broth to a boil, add the potatoes and cook for 20 minutes. Wash the leeks, dry and cut into rings, add to the soup and cook for 5 minutes.
  4. Wash the remaining dill greens, dry and chop finely. Dissolve the flour with cream into the soup, bring to a boil and cook for 5-7 minutes.
  5. Pour the finished soup into bowls, put a little fish fillet in each, sprinkle with herbs and serve. You can also garnish with green onions.
