Lohikeitto is a type of festive Finnish soup called kalakeitto (Finnish milk ear) that uses salmon and cream.

  1. We take a saucepan of 2.5-3 liters. Heat olive oil at the bottom. Chop the leeks and sauté in olive oil, as soon as it becomes soft, pour 3 cups of water into a saucepan. Put the bay leaf and bring to a boil.
  2. Wash, peel and dice the potatoes. Reduce heat and add potatoes. Cover with a lid and cook until the potatoes are cooked.
  3. Put the salmon in a saucepan and cook for about 5 minutes. Then add the cream and stir.
  4. You can skip this item (to taste) Dissolve the starch in water and add to the pan, stir and cook until thickened, the more starch you add, the thicker the soup. I don't add starch. Flour is added in the original recipe.
  5. At the end add butter, salt, pepper, mix and remove from heat. Sprinkle with dill on top. When serving, put a quarter of a lemon circle (to taste).
