  1. Peel the fish, remove the entrails and rinse well. Cut into pieces. Place the fish in a saucepan, cover with cold water and salt. Add chopped onion and parsley root. Cover the pan with a lid and bring to a boil. Skim off the foam and cook for 25-30 minutes. Remove the pieces of fish from the pan, leaving the head and fins. Cook for another 15-20 minutes. Strain the finished broth. If desired, you can add pieces of cooked fish to the broth or use them for another dish.
