French onion soup with cheese

French onion soup with cheese

Ingredients

  1. Chop the onion into half rings. Heat olive oil in a saucepan, add butter to it and melt, add onion. Simmer for about 5 minutes, stirring constantly. Reduce heat, add sugar and simmer for about 15 minutes, covering the pan with a lid.
  2. Add salt and pepper to taste. Then cook without a lid for about half an hour, until the onion takes on a caramel shade. Pour in wine, broth and boil. Reduce the heat and cook for about another half hour, until the soup thickens. Preheat the oven.
  3. Put pieces of baguette on a baking sheet covered with parchment, bake until golden brown.
  4. Pour the soup into refractory bowls, put a piece of baguette on top, sprinkle with grated cheese. Bake the soup in the oven for about 5-7 minutes, until the cheese is browned. Serve the French onion soup with hot cheese.
