Chop the onion into half rings. Heat olive oil in a saucepan, add butter to it and melt, add onion. Simmer for about 5 minutes, stirring constantly. Reduce heat, add sugar and simmer for about 15 minutes, covering the pan with a lid.
Add salt and pepper to taste. Then cook without a lid for about half an hour, until the onion takes on a caramel shade. Pour in wine, broth and boil. Reduce the heat and cook for about another half hour, until the soup thickens. Preheat the oven.
Put pieces of baguette on a baking sheet covered with parchment, bake until golden brown.
Pour the soup into refractory bowls, put a piece of baguette on top, sprinkle with grated cheese. Bake the soup in the oven for about 5-7 minutes, until the cheese is browned. Serve the French onion soup with hot cheese.
