Cold vegetable soup. Gazpacho, originally from Andalusia, is a typical Mediterranean dish.

Ingredients

  1. Chop the garlic finely. Chop the onion. Chop the cucumbers. Chop the tomatoes finely. Chop the celery. Place half of the vegetables in a food processor. Pour over tomato juice. Add olive oil. Add some wine vinegar. Add sugar. Add tabasco. Sprinkle with a pinch of salt.
  2. Beat until almost smooth. Pour the puree into a bowl and add the remaining 2 cups of tomato juice. Lay out the remaining half of the vegetables. Put the bowl in the refrigerator. Slice the avocado. Fry a few slices of bread. Fry the shrimp. Pour soup into bowls, add shrimp and herbs. Serve with toasted bread.
