German potato soup with sausages

This thick and rich dish with smoked meats, vegetables and herbs is perfect for a hearty dinner. For an even richer taste, add some cream.

  1. Peel and dice the potatoes, carrots and celery root.
  2. Peel and cut both onions into small cubes. Chop the parsley finely.
  3. Heat vegetable oil in a large saucepan, fry onions until golden brown for 5 minutes.
  4. Add marjoram, potatoes, leeks, carrots and celery root to a saucepan and sauté vegetables for 2 minutes.
  5. Pour the broth to the vegetables, add the bay leaf. Cook the soup over low heat, covered for 30 minutes, until the vegetables soften.
  6. Slice the sausages thinly. Remove the soup from heat, season with salt and pepper to taste, add parsley and chop with a blender.
  7. Pour the sausages into the soup, cover the pan with a lid and let the dish brew for 5 minutes. Add cream or sour cream to the soup, if desired.
