Everyone knows that gazpacho is a red-colored tomato soup. However, gazpacho is not only red, but also green :) Here's how to make green gazpacho.

  1. Wash peppers, clean them of seeds and membranes, cut them in half. We spread it on a baking sheet, skin side up, as in the photo. Sprinkle lightly with olive oil and place in the oven.
  2. We bake the peppers for about 15 minutes at 200 degrees until such a state as in the photo. The skin should be slightly swollen. Let the peppers cool to at least room temperature. Then you will need to remove the skin from them.
  3. Place the cucumbers in a blender bowl and grind until smooth. The cucumbers should be mashed with something like this. Then add bread crumb, peppers, garlic, green onions, parsley, olive oil and salt to the cucumber puree. Grind again, again until smooth.
  4. You will get such mashed potatoes. Add a little vinegar and taste. Adjust the pungency, salinity and consistency with lemon juice, salt and cold water. Serve with rye croutons.
