Lagman is a national Uzbek dish that looks like a thick meat soup with noodles. Traditionally, Lagman noodles are made by hand, but today ready-made noodles are increasingly used. You can take tagliatelle pasta or other wide noodles.

  1. We prepare Vaja (meat roast with vegetables). Cut vegetables separately: onions - slices, bell peppers - straws, carrots, radishes, and tomatoes (pre-scald and peel) cut into cubes. Bean and celery pods cut into pieces of 2-3 cm, each clove of garlic peeled and cut lengthwise into 4 slices. If you like spicy - put chili peppers whole, if not - you can cut a chili pod into small rings and everyone will add as much pepper to the finished dish as desired.
  2. The flesh of the meat is cut from the bone, cut into small pieces. In a saucepan in which the Vaja will be cooked, heat the oil and fry the bone with the pieces of meat over high heat until golden and cook until the meat juice boils. Add onion and fry.
  3. Without reducing the heat, add the carrots and, stirring, fry until the carrots change color. Add garlic, tomatoes, radish, hot pepper pod (optional), beans, and celery, add spices, and cook, stirring, for a few minutes. Bring the tomato sauce to a boil, add the bell peppers, and, stirring, fry for a couple of minutes.
  4. Add just enough boiling water to cover the mixture, bring to a boil, reduce heat, add salt, cover and cook for about 15 minutes, vegetables should not be boiled. Remove and discard the bone.
  5. Boil the noodles in well-salted water. When serving, spread the noodles on plates, add value, sprinkle with finely chopped green onions and serve immediately. If desired, add chopped chili peppers.
