In ancient times, it was believed that lentils cure nervous disorders, make a person calm and patient. Lentils, of course, are not a panacea, but very useful: they contain a lot of potassium, but little fat, in themselves an excellent hematopoietic product, stimulates metabolism, increases immunity. Some varieties of lentils, such as flat-grain dish lentils, are recommended for diabetes to lower blood sugar.

  1. Rinse the lentils until the water is clear. Cover with cold water and leave for 1 hour. Wash ribs, celery, peppers and tomatoes. Peel potatoes, chop coarsely. Cut the celery obliquely into 2 cm wide pieces, the tomatoes into cubes, cut the pepper in half and remove the seeds.
  2. Heat vegetable oil in a saucepan. Fry the ribs for 4 minutes. Add potatoes, celery, pepper and garlic. Cook over medium heat for 5 minutes.
  3. Pour in 1.5-2 liters of water, increase the heat and bring the soup to a boil. Cook until half cooked potatoes. Add tomatoes, lentils and bay leaves. Cook over medium heat for another 10 minutes.
  4. Add chopped parsley and cover. Remove soup from heat, remove bay leaf. Let it brew for 15-20 minutes.
