Lenten okroshka with mushrooms

During fasting and for unloading, my family and I eat lean okroshka with mushrooms. Any mushrooms that you have at home or that you buy go into it. A simple option - with champignons, royal - with white ones.

  1. Boil the beets, peel and grate on a coarse grater.
  2. Boil the mushrooms. Then they must be thrown into a colander and squeezed out a little. Chop pretty finely.
  3. Peel the pickled cucumbers, select seeds and cut into cubes.
  4. Mix everything in one bowl, fill with kvass and mix again.
  5. Add horseradish to taste, I usually put a couple of teaspoons. Horseradish okroshka will add spice.
  6. Rinse and chop green onions, sprinkle with okroshka with mushrooms. Our dish is ready. Bon Appetit!
