Liver meatball soup

This dish turns out to be light and at the same time satisfying. Meatballs made from offal are in no way inferior in taste to classic meat ones.

  1. Grind the washed liver in a blender along with the onion and butter.
  2. Add salt, pepper, marjoram, parsley, bread crumbs and lightly beaten eggs. Mix well to get a homogeneous mass.
  3. Cut the carrots and the second onion into small pieces.
  4. Heat vegetable oil in a saucepan over medium heat. Fry the onions for 4-5 minutes, add the carrots and cook everything together for a few more minutes.
  5. Pour the broth over the vegetables. When the liquid boils, use an ice cream spoon or a regular spoon to place the meatballs in the broth.
  6. Cook the soup for about 20 minutes after boiling. Season with salt 5 minutes before cooking. Sprinkle with herbs before serving.
