Italian cuisine has always delighted with an abundance of very unusual and delicious dishes. Minestrone in Genoese is no exception, the soup turns out to be very aromatic, satisfying and very appetizing! I recommend!

  1. Heat 2 liters of water in a saucepan. Chop 200 grams of cabbage and two carrots. Prepare 100 grams of legumes. Pour cabbage, carrots and beans into boiling water, cook for 1 hour. Meanwhile, cut two potatoes into cubes.
  2. Remove the skin from the tomatoes and also cut into cubes. After an hour, add all this to the pan. Add half a glass of olive oil there.
  3. Cook for another 30 minutes with the lid open. Cut the courgette into cubes. Cut the leek into rings. Chop two garlic cloves. We send all this to the pan in 30 minutes. Put chopped basil and parsley greens there, salt and pepper to taste.
  4. We also put 1 tbsp. pesto sauce. Cook for another 30 minutes and serve the soup. Bon Appetit!
