  1. In a saucepan with a thick bottom, heat the oil and fry the onions, chopped into small cubes.
  2. Add the carrots cut into circles and simmer over low heat for 3-4 minutes, until the vegetables are soft. Put chopped zucchini, bell peppers and tomatoes in a saucepan. Cover the lid and simmer vegetables over low heat for 8-10 minutes.
  3. Pour warm ready-made broth or ordinary boiled water. Add potatoes, cut into medium cubes. Bring to a boil and continue simmering the soup until the potatoes are tender, about 15-20 minutes.
  4. Then, add salt to taste and dip the pasta into the vegetable soup. Cook the minestrone for another 7-8 minutes, until the pasta is done.
  5. Pour the finished dish into plates. Season with pepper, add basil and grated cheese.
  6. As a result, we get a thick and rich soup with a pleasant vegetable aftertaste, which is a feature of the classic minestrone recipe.
