  2. Put celery, hot peppers and onions in one deep bowl. In another bowl, combine potatoes, peas, bell peppers, zucchini and green beans. Cut the bacon into small strips. Now pour the olive oil into a saucepan and fry the bacon in it. Do not fry it too much, but only heat it a little (1-2 minutes over medium heat).
  3. Put the contents of the first bowl (celery, onions and hot peppers) into a saucepan. Simmer vegetables with bacon over low heat for 10 minutes.
  4. We make cross-shaped cuts on the tomatoes and fill them completely with boiling water, leave so for 3 minutes. Remove the tomatoes with a slotted spoon and peel them when they cool slightly. Put the tomatoes in a blender bowl and grind until they become mushy.
  5. Put the tomato puree in a saucepan with vegetables and bacon, mix everything and continue to simmer (5 minutes).
  6. Next, pour in the tomato juice, bring the liquid to a boil, cook for 5 minutes. Put the remaining vegetables in a saucepan, add chopped garlic, cook for another 5 minutes. Now beans are used, we continue to cook for 5 minutes.
  7. Then we dilute the soup with boiling water so that we get an almost full pan. Salt and pepper the soup, cook for 10 minutes. In the meantime, finely chop the basil leaves.
  8. Remove the soup from the heat and pour it into bowls. Serve minestrone garnished with parmesan and basil. Bon appetit, everyone!
