Okroshka on birch sap

Ingredients

  1. Rinse and chop the dill and onion. Add salt, you need to heat the herbs until juiced. I recommend using fine sea salt.
  2. Rinse the cucumber, cut into small cubes and send to the herbs.
  3. Peel and dice the boiled cooled potatoes.
  4. Chop the boiled sausage into cubes.
  5. Peel the eggs, separate the whites from the yolks. Grind the proteins.
  6. Let's start preparing the dressing. Mash the boiled yolks with a fork, add the mustard, squeeze out the lemon juice (adjust the sourness to your liking!).Add a spoonful of mayonnaise. The dressing can be diluted with a small amount of birch sap. Mix everything and send it to vegetables, herbs and sausage.
  7. Add birch sap to the ingredients, mix everything.
