Spring comes into its own, it will soon become very warm. In hot weather, a plate of cold okroshka is what you need! And here the more recipes, the better!

Ingredients

  1. Grind the sausage into small cubes. Chop the herbs finely. Cut half of the cucumbers into small cubes, and the other half on a coarse vegetable grater. Grate the peeled radishes. Coarsely chop the hard-boiled eggs.
  2. Place all food in a large saucepan. Season the vegetable mixture with salt and pepper. Pour with chilled kefir, add table grated horseradish and lemon juice. Lastly, add boiled or baked beets grated on a fine grater.
  3. Pour in mineral water with gas (according to your preference - thicker or thinner) a glass or two.
  4. Try and adjust the taste for salt and acid. Let it brew for about 15 minutes and serve with soft brown bread.
