Onion soup with cheese croutons in pots in Irish style

Ingredients

Directions

  1. Heat olive oil in a large skillet over high heat. Add garlic and saute until aroma appears. Add onion, season with salt and cook for 5 minutes, stirring frequently. Reduce heat to low and cook for about 15 minutes, stirring occasionally, until onions are golden brown.
  2. Add thyme, sherry vinegar and beer. Reduce the beer by half and add the beef broth. Bring the mixture to a boil and cook for another 10 minutes. Preheat your grill in the oven. Transfer the soup to an ovenproof serving bowl or portion ovenproof pots. Top with slices of toasted bread with a slice of cheddar cheese. Grill until cheese begins to melt and brown. Serve hot onion soup.
