Heat the olive oil in a large saucepan, add the chopped onions and simmer for 10 minutes, or until the onions are tender but not brown. Stir constantly to keep the onion from burning. Add the garlic and fry for another 3 minutes, stirring occasionally.
Add 3/4 peas, chopped mint leaves and 3/4 broth. Cover the saucepan and cook over medium heat for 10 minutes.
After cooking, whisk the soup in a blender to make a thick puree. Return the puree to the pot, season with salt and pepper, and add the remaining peas and broth. Cook for another 5 minutes to cook the freshly added peas.
Add the parmesan.
Chill the soup and serve with crispy croutons.
