Pork soup with grilled vegetables

If you first fry the peppers, eggplant and zucchini, and then add to the soup along with soy sauce, the taste of the dish turns out to be even brighter and richer.

  1. Pour cold water over the pork. Bring to a boil, remove the foam and simmer over low heat for about an hour or longer.
  2. Place the meat on a plate, cool slightly and cut into portions.
  3. Cut the pepper, zucchini and eggplant into medium pieces. Grill in a skillet for a few minutes on each side.
  4. Return the pork to the pot along with the coarsely chopped tomatoes and grilled vegetables. Add salt, pepper, basil, oregano, and soy sauce. Cook everything together for another 10 minutes.
  5. Sprinkle with herbs before serving
