Pumpkin soup with shrimps

Ingredients

  1. Cut the pumpkin into cubes, put in a saucepan and cover with water so that the water covers the pieces of pumpkin. Boil 20 min. until ready, the pumpkin should be soft.
  2. Pour vegetable oil into a frying pan and add chopped garlic cloves, fry for 1 minute, the garlic should not burn.
  3. Add the shrimp to the pan with the garlic, stir and fry for one minute.
  4. Remove all the shrimp from the pan and add finely chopped onion to the pan, saute for 2-3 minutes until golden brown. Add grated carrots and 20 gr. butter. Stir and fry over medium heat until tender, 3-4 minutes.
  5. Transfer the fried vegetables from the pan into the pan where the pumpkin was boiled and pierce with a blender, add 1 teaspoon of sugar, salt and pepper to taste.
  6. Slowly, while stirring, pour 100 ml into the pan. cream and bring to a boil. Switch off immediately.
  7. Pour the soup into a bowl, put the shrimp on top and sprinkle with finely chopped parsley. Crackers can be served with the soup.
