When the husband of my niece (Chuvash by nationality) treated us to a shurpa, I wrote down this recipe as a Chuvash-style shurpa. It turns out amazingly tasty shurpa - try it, the Chuvash know a lot about it.

  1. We take the meat of a young lamb. Best of all is the shoulder blade, neck or back. We rinse well and cook for at least an hour. A set of vegetables for a shurpa is onions, carrots, potatoes, sweet and hot peppers, and a tomato.
  2. Prepare the spices: coriander, hops-suneli, savory and some cumin seeds. Chop the potatoes coarsely and chop the rest of the vegetables into half rings. Put potatoes and carrots in broth with meat. When these vegetables are half cooked, add the rest.
  3. When the potatoes are completely cooked, remove from heat and let the shurpa brew for 5-10 minutes.
