  1. Cut the light part of the leek and celery into small pieces, the potatoes - medium. Chop the green onion.
  2. In a saucepan, heat the butter over medium heat. Add leek, celery, potatoes and green onions. Cook, stirring occasionally, for about 10 minutes.
  3. Pour broth over vegetables and herbs. Cook for 10-15 minutes, until the potatoes are soft enough.
  4. Add spinach leaves, stir and simmer for another minute or two.
  5. Remove soup from heat, season with salt and pepper and puree with a hand blender. Pour in the cream and stir.
