Ingredients

Potatoes - 2 Pieces (or sweet potato) Pumpkin - 200-250 Gram Sweet red pepper - 1/2 Pieces Onion - 1 Piece Garlic - 1-3 Cloves Vegetable broth - 1 Liter Salt - To taste Ground black pepper - To taste Ground paprika - 1 teaspoon Coconut milk - 100 Milliliters (for serving) Olive oil - 2-3 Tbsp. spoons

Directions

Preheat the oven to 200 ° C. Prepare the food you need. Wash the vegetables, peel the onions and garlic. Remove the seeds and stem from the pepper. Cut all vegetables, except for the garlic, into large pieces, put on parchment in a baking dish.
Drizzle with olive oil, season with salt and pepper to taste, cover with parchment. Bake in oven for 30-35 minutes until vegetables are tender.
Remove the skins from the pumpkin and potatoes. Place the cooked vegetables in a blender, add chopped garlic if desired and crush until puree. Add the hot vegetable broth gradually, bringing the soup to the desired thickness.
Pour the puree soup into bowls, add coconut milk, chopped green onions.
