Finely chop the onion.
Cut red bell pepper into cubes.
Chorizo cut into half rings.
Fry the onion, pepper and chorizo in vegetable oil in the pan in which we will cook the soup. Fry for 6-7 minutes, stirring constantly. Then add the garlic, stir and fry for another 2 minutes.
Add the beans and oregano to the pot and cover with enough water to cover the beans.
Beans can be pre-filled with water and left overnight. This will greatly reduce the cooking time.
Add salt, pepper and cook until the beans are tender, stirring occasionally. Add water if necessary.
The cooking time depends on the type of beans and whether you soaked them or not.
When serving, add sour cream and chopped parsley to the plates. Bon appetit!
