Soup with lentils and orecchiette pasta

Ingredients

  1. Heat all the olive oil in a large saucepan, and flake the onions, garlic and red pepper over medium heat until the onions are tender, about 2 minutes. Put 1 tablespoon of the seasoned oil in a bowl and set aside. Add tomato paste and fry, stirring occasionally, for another 2 minutes. Add chicken broth, 4 glasses of water. Bring to a boil, then add the pasta and cook for 5 minutes.
  2. Add lentils, reduce heat and cook until pasta is tender, another 10 to 12 minutes. Add 1/4 tbsp to the soup. Parmesan and the remaining parsley, season with salt and pepper to taste, mix well. Meanwhile, add 1 tablespoon of parsley and 1 tablespoon of boiled water to a bowl of oil, mix. Pour the soup into bowls, drizzle with the seasoned butter, and sprinkle with the remaining Parmesan.
