  1. In a small saucepan over medium-high heat, saute the bacon until crisp. Use a slotted spoon to transfer the bacon to a paper towel and set aside. There should be about 4 tablespoons left in the saucepan. l. melted fat. Add the onion and red pepper to the saucepan. Cook until soft, about 4 minutes. Season with salt and pepper to taste. Add jalapenos and garlic and cook until aromatic, about 1 minute. Stir in flour. Cook until lightly light, about 1 minute.
  2. Add chicken stock and potatoes and cook for 10 minutes; the potatoes become soft. Add cream, corn, cayenne pepper, and bay leaf. Cook for another 15 minutes. Transfer to a serving bowl and sprinkle with crispy bacon.
