Straciatella is a light Italian soup that is prepared in almost 15 minutes. Delicious nutritious, perfect for summer. Straciatella is prepared on the basis of meat or chicken broth by adding to it a beaten egg with grated parmesan and fresh herbs. And this is the most interesting part of the soup: the broth is stirred so that a funnel is formed, and the egg mixture is poured into this funnel in a thin stream. Add fresh spinach at the very end to fill the soup with healthy fiber and enjoy.

  1. In a large saucepan over medium-high heat, bring broth to a boil. In a bowl, combine eggs, cheese, parsley, and basil. Reduce heat to moderately low. Stir the broth in a circular motion.
  2. Gradually pour the egg mixture into the funnel in the broth, stirring gently with a fork to form thin egg strands, about 1 minute. Add spinach and season with salt and pepper sous to taste. Pour into bowls and serve.
