You can add a little thyme or your favorite spices to this delicate classic soup, then it will come out even tastier

  1. Disassemble the cabbage into small inflorescences. Chop the onion into small pieces, chop the garlic.
  2. Heat oil in a saucepan over medium heat. Fry the onion for 5-6 minutes, add the garlic and cook for another 30 seconds.
  3. Put the cabbage, thyme sprigs and salt and pepper in the same saucepan.
  4. Pour in broth, bring to a boil and simmer over low heat for about 15 minutes.
  5. Remove the soup from the stove and remove the thyme sprigs. Leave for about 10 minutes, then blend with a hand blender.
  6. Pour the cream into the soup and stir. Return to the stove and cook, stirring occasionally, over low heat for a few more minutes.
