Tomato puree soup with blue cheese

  1. Melt the butter in a large saucepan over medium heat. Add onion and cook until onion is tender, about 5 minutes. Add garlic and cook for about 2 minutes. Add flour and fry until golden brown, about 2 minutes. Add cognac and mix thoroughly.
  2. Place potatoes in a saucepan, pour in broth and bring to a boil. Reduce heat and simmer for about 15 minutes, until potatoes are tender.
  3. Add tomatoes along with juice, cream, blue cheese and basil. Season with salt and pepper. Pour the contents of the saucepan into a blender and beat until smooth. Add vinegar and pour into bowls. Garnish with basil and blue cheese.
