This tomato soup can be made with canned tomatoes or cooked tomato puree. It cooks quickly, and if someone loves tomato soups, but does not like to stand at the stove, then it's easy. And without bacon (the fat from it can be replaced with vegetable oil), this is a completely lean dish.

  1. Peel and chop the onion. Chop the garlic. Chop or chop the tomatoes in a blender.
  2. Fry the bacon in a heavy-bottomed saucepan until brittle. Lay it out on a paper towel. Place the onion in a skillet and fry, stirring occasionally, until tender. Add garlic and cook for 30 seconds. Add tomato paste and mix with onion and garlic. Cook for 2-3 minutes. Add flour, salt, pepper and cook for another 2 minutes.
  3. Add tomatoes and vegetable broth. Reduce heat and simmer on a low boil for 15-20 minutes, stirring occasionally to soften the tomatoes. Purée the soup with an immersion blender or pour portions into a blender and beat until smooth. Pour the puree soup into a saucepan, add balsamic vinegar, salt and pepper. Serve sprinkled with crumbled bacon and chopped herbs.
