This Mexican-style chicken soup is made almost by itself. Just load all the ingredients into the slow cooker and go about your business. When you return, you will have a rich spicy soup that will warm you up in cool weather. Add chopped tortilla chips and grated cheese to the soup to thicken. You can also add sour cream, lime, or diced fresh avocados to your serving in a Mexican fashion. And so that the soup is not too hot, peel the jalapenos before adding to the pan to remove the baffles and explosive seeds.

  1. Place the chicken, tomatoes (and their juices), beans, broth, water, onions, garlic, jalapenos, cumin and chili spice mixtures in a slow cooker. Cover and simmer on high heat for 3-4 hours or on low heat for 6-8 hours.
  2. Open the lid and use tongs to remove the chicken from the pan. Once it's cool enough, remove the meat from the bones and chop, then return the meat to the saucepan. Add lemon juice. Chop a few tortilla chips into each bowl and top with the soup. Serve sprinkled with cilantro and grated cheese.
