  1. Pour olive oil into a large roasting pan (6 liters) and place over medium heat. When the oil is hot, add the onions, carrots, celery and salt and simmer for about 6-7 minutes, until the onions are translucent. Add lentils, tomatoes, broth, coriander, cumin and heavenly grains and mix well. Turn the heat up and bring to a boil. Reduce heat to low, cover saucepan and simmer until lentils are tender, about 35-40 minutes. Use a hand processor to puree the soup to the desired consistency. Serve immediately.
