Yogurt soup

Yogurt soup is a popular soup in Turkey. Variants of this soup are also found in Iraq, Iran and other Western Asian countries.

Ingredients

  1. Wash the rice thoroughly and boil until tender.
  2. In a saucepan, combine yogurt, flour, egg and 100 ml. water (broth) from the total. Mix thoroughly with a whisk.
  3. Add the rest of the water (broth) and, stirring continuously over medium heat, bring to a boil.
  4. Melt butter in a frying pan, add mint, paprika and tomato paste. If you like it spicy - add chili peppers. Mix and fry lightly.
  5. In a boiled and slightly thickened yogurt mass, add boiled rice, salt and mix.
  6. Add mint filling from the pan to the soup, mix. Bring to a boil and remove from stove.
  7. If desired, you can squeeze the juice of a lemon, but it is better to do it individually, in your own bowl. Bon appetit!
