Syuzma is a strange word for the Russian ear and not the most familiar product. In fact, it is very common in the Middle East, Central Asia and the Caucasus under various names. This is the next step after yoghurt or katyk towards cheese. Suzma is made easily, while it is very tasty and healthy.

  1. For suzma, line the bowl with a large piece of linen or gauze folded in 6-7 layers. Pour the katyk or yogurt into it, lift the loose ends and twist so that the contents cannot leak out. Tie with a strong knot and hang on a hook over some container where the liquid will drain. Leave on for 12, or better for 24 hours.
  2. Put the cinnamon in an oven preheated to 180 ° C for 10 minutes. Then break into small pieces and grind in a mortar as small as possible (if it doesn’t work well, use a coffee grinder).
  3. Remove the finished syuzma from the fabric, sprinkle with cinnamon and season with honey to taste. Mix thoroughly and refrigerate for 1 hour or in the freezer for 15–20 minutes.
  4. Cut the fruit into portions, sprinkle with lemon juice and let dry for 15 minutes. Then brush with warmed ghee and place on a wire rack. Grill over well-burnt coals or under a very hot grill, turning over to the desired degree. Serve with a cold cup.
