Lettuce Soup with Salmon

This delicate salmon soup of a joyful green color is made from lettuce, although cooking lettuce leaves is not the most common thing for us. We are still used to eating them raw. Try it - it is very delicate and aromatic, quite suitable for holiday dinners and for your usual everyday lunch.

  1. Disassemble the lettuce into leaves, remove the bottom white part. Boil water, immerse the leaves in boiling water and cook for 1 minute. Then transfer the lettuce to a blender, add the fish stock and puree.
  2. Then add sour cream, lime juice, pepper and beat in a blender again. Taste, salt, pepper and add a pinch of sugar. Transfer to a saucepan and cover.
  3. Cut the salmon into small cubes, fry them in butter, 3 minutes, dry lightly on a paper towel. Season with salt and pepper.
  4. Heat the soup a little (it should not be hot or cold), pour into bowls, add the salmon cubes and garnish with chopped dill.
