No Baked Strawberry Cheesecake

Strawberry cheesecake without baking can be a decoration of the festive table of the highest level. A real masterpiece of confectionery art! A delightful marble pattern is not at all difficult to make, but it looks insanely beautiful.   1. Make a no-bake strawberry cheesecake base. Cut the butter into cubes, place in a ladle and melt over medium heat. Let cool slightly.
  2. Grind the shortbread cookies for the base of the cheesecake into small crumbs in a food processor or blender. Pour in the melted butter and mix thoroughly with a spatula.
  3. Line the bottom of a 24 cm dish with baking paper. Put the resulting oily crumb on top and tamp with your palms or a glass. Cover the base of the cheesecake with cling film and refrigerate.
  4. Make a no-bake strawberry cheesecake jelly. Pour gelatin with 2 tbsp. l. water and leave for 10 minutes. Chop the strawberries in a blender until smooth.
  5. In a saucepan, combine strawberry puree, sugar and lemon juice. Bring to a boil, then reduce heat to low. Add gelatin and stir until dissolved. Remove from heat.
  6. Make a no-bake strawberry cheesecake cream cheesecake. Pour gelatin with 3 tbsp. l. water and leave for 10 minutes. Beat the cream with a mixer until soft peaks.
  7. Whisk the sugar and cream cheese in a separate bowl. Then add the natural yogurt and whipped cream alternately. Swollen gelatin, stirring, dissolve and pour through a strainer into the cheese mass. Whisk at low rpm.
  8. Pour the resulting cream cheese onto the cheesecake base without baking. Spread strawberry jelly on top. Then use a spoon handle to lightly stir the layers to create a marbled pattern. Refrigerate cheesecake for 4-5 hours.
