Pizza with Raw Smoked Ham and Fig Jam

This pizza cannot be called classic: it contains an unusual ingredient - fig jam. But why not? Sweet and spicy fig jam goes well with any cheese, and with any smoked meat too.

  1. Combine flour, sugar, salt and yeast in a deep bowl. Pour butter into a bowl and then add warm water to knead the dough. Leave it to rise for an hour.
  2. Place the baking sheet on the bottom shelf of the oven. Preheat the oven to 250-260C.
  3. Mix flour with semolina (semolina) and dust thickly on the work surface. Roll the dough into a ball, put it on a work surface and sprinkle with the remaining flour mixture. Roll out the dough into a thin, round 33 cm flat cake (or 2 20 cm diameter flat cakes). Sprinkle the rolling pin with flour mixture on all sides so that it does not stick.
  4. Grate the Parmesan flakes and spread over the surface of the dough. Grate the mozzarella, put in the middle of the tortillas and spread over the dough with your hands.
  5. Transfer the pizza to a preheated baking sheet upside down and place in the oven for 7 minutes.
  6. Remove the pizza from the oven and place the broken blue cheese on top of it. Turn the baking sheet 180C and return the pizza to the oven, now on the lower shelf. Bake for 3-4 minutes.
  7. Remove the pizza from the oven and let it cool for a couple of minutes. Then brush with fig jam. Slice the ham lengthwise into 3-4 slices and place on top of the pizza. Drizzle with balsamic cream and serve.
