  2. Cream: pour gelatin with a small amount of boiled cooled water to swell, beat the yolks with sugar into a strong stable mass until the sugar is completely dissolved, add salt, mascarpone and mix until smooth. Dissolve the swollen gelatin in a water bath, pour into the cream, stirring constantly.
  3. Cover the dessert mold from the inside with parchment paper, put the savoyards soaked in a mixture of coffee and liqueur on the bottom (or blot with a brush in the mold), put a layer of cream on top, then a layer of soaked cookies, finish with a layer of cream. Smooth the surface with a spatula, put it in the refrigerator, brew and grab.
