Boil beans with salt

For about three jars of the salty beans you need the following ingredients:
1 kg of beans
20 grams of salt
water
You can easily cook beans in just a few steps:
Clean and wash the beans. Remove the ends and cut the beans to the desired size.
Preheat the oven to 100°C. Meanwhile, bring water and salt to a boil in a saucepan and blanch the beans for 5 minutes.
Then take the beans out of the pot and rinse them with cold water. Boil the bean water again.
Place the quenched beans in previously cleaned mason jars and pour the boiling bean water over them. Close the jars tightly.
Place the glasses in a roasting pan, large pan or casserole dish and fill the respective container with water. It is important: The glasses must not touch the edge of the container!
Now let the beans cook in the oven for two hours and then cool them down under a tea towel.

Boil the beans sour

If salty beans aren’t quite to your liking, you can easily boil them sour with just a few more ingredients. You will need for about three glasses:
1 kg of beans
2 onions
125 ml vinegar
500ml of water
30 grams of sugar
pickled spice
Salt
dill
savory
Preparing sour beans works a little differently than the first recipe:
Wash and trim the beans. remove the ends.
Boil them in salted water until al dente. This takes about 10 to 15 minutes.
Take the beans out of the water, shock them with cold water and fill them into the previously cleaned mason jars.
Add dill and savory and 2 teaspoons of pickling spice.
Peel the onions and cut them into rings.
Bring the water, salt, vinegar, sugar and onions to a boil in a saucepan and let it simmer for a few minutes. Then fill the brew into the mason jars and seal them tightly.
Now place the glasses in a water-filled, oven-safe container as described in the first recipe. The glasses should not touch the edge of the container.
Cook the beans at 100°C for two hours, then take the jars out of the oven and let them cool, covered.

Dry basil: in the air

Basil is particularly indispensable in Italian cuisine and should therefore not be missing from homemade pizza and pasta. Now you can put the leaves in a sealable jar or other container.

Drying basil: in the oven

If you don’t have the time to air dry, drying the basil in the oven is a much more time-saving option. All you have to do is spread your picked leaves evenly on a tray and let them bake for about 20 minutes at the lowest temperature. It is best to leave the tray in the closed oven overnight to ensure that the basil leaves are completely dry. Then you can also fill them in a suitable container. It is advisable to use this method only in exceptional cases due to the increased energy consumption.

Dry basil: these are the advantages

Drying basil is – like preserving other foods – ecologically advisable.
The basil pots from the supermarket in particular usually don’t last long – before they die, it makes sense to dry and store the leaves immediately. In this way you can counteract food waste, at least in small steps.

Mushrooms keep longer in cooler temperatures, so it’s best to store them in the crisper in the fridge.
Condensation forms quickly in closed plastic bowls or bags, from which the mushrooms become mushy and go moldy more easily. It is therefore better to store the mushrooms in a paper bag or in a dry and clean tea towel – it is important that they get air.
It is advisable not to store the mushrooms next to other odorous foods, as they easily absorb foreign odors and thus lose their typical mushroom taste.

Storing radishes: general information

Radishes are among the first vegetables to be harvested throughout the year. The delicious vegetable got its name from Latin. “Radix” appropriately means root. It has been part of European cuisine since the 16th century, originating in France. In the decades and hundreds that followed, it was eaten more and more in other countries as well. Whether in salads, quark dips or simply raw – radishes are always a good choice. If you store radishes in the refrigerator, they will stay fresh for up to three days.

You can find out if the radishes are still fresh in the store. They shouldn’t be too soft. Also look at the leaves. The fresher the leaves are, the fresher the radish itself is. Wilted leaves indicate that the radishes have passed their prime.

Storing radishes: storage tips

If you store radishes properly, they stay fresh and crunchy longer:
Cut off leaves and roots with a knife. This prevents the stored water from going into the leaves. This leaves more in the radish itself.
Take a can and put the radishes in it. Alternatively, you can wrap the radishes in damp towels.
Store them in the crisper in the fridge. They stay there for up to three days. A cool basement is an alternative.
Of course you can also freeze radishes. But then they lose their taste, at least partially.
If the radishes have softened, place them in a water bath for a few minutes. This makes them a little crunchier again.

Rosemary is a particularly aromatic and powerful spice. It is easy to grow in the garden, on the balcony or even on the windowsill. You can use it fresh, especially in the warm season. Then you can also build up a small supply for the winter – for example by making rosemary oil or drying the plant.

If you want to dry rosemary, you have two options:
You let it dry slowly in a dry and warm place.
You dry the herb in the oven.
Drying in the oven is much faster. However, you need additional electricity. It’s only a good idea if you don’t have a way to preserve the rosemary in a dry place.

Drying Rosemary: Harvesting and Preparation

You can harvest rosemary in the summer months, when it is most aromatic. To harvest the rosemary, cut off as many sprigs as you need. Regular harvesting can replace pruning the plant.

The best time is in the morning or mid-morning, once the dew has dried on the branches. It is good if the plant has received plenty of sunshine in the previous two days. Then the aromas are particularly strong.

You should avoid washing the rosemary. The branches lose their aroma. However, remove dried or wilted parts of the plant.

Air dry rosemary

Dry rosemary by bundling it up and hanging it in a dry, airy place. For this you need:

Use the rubber band to bundle up to eight sprigs of rosemary into a small bouquet. Tie a piece of string to it so you can hang the waistband upside down.

A suitable place for drying is important. It should have the following properties:
warm (optimal are 21 to 27 degrees)
dry
airy
preferably without direct sunlight
Once you have found a suitable place, hang up the rosemary bouquets. You leave them hanging until the branches are noticeably dry and brittle. This takes several days. Exactly how long is difficult to say. That depends on the individual circumstances.

As soon as the rosemary is dry, you can remove it and store the whole sprigs airtight. You can also pluck off the individual needles and store them in an old screw-top jar.

Drying rosemary: in the oven

To dry the rosemary in the oven, it is best to place the individual sprigs on a grid. They shouldn’t touch. Put the grid in the oven at the lowest temperature (maximum 50 degrees) and leave the oven flap open a crack so that the moisture can escape.

After about three to four hours, the branches should feel dry and brittle. If not, leave them in the oven longer and check regularly. Once the sprigs are dry, you can store them the same way you would air-dry rosemary.

With the oven method, however, consider the high energy consumption and prefer air drying. You may be able to house your rosemary with friends or relatives if you don’t have a suitable room. They will certainly be “rewarded” for their hospitality with a glass of dried, fragrant rosemary.
