  1. We start cooking with beets, as it will take the longest to cook. We rub it on a coarse grater. We put a frying pan on the fire, pour vegetable oil and send the grated beets there. We do not add anything yet, but we wait for it to begin to prepare.
  2. (Alternatively, the beets can be baked in the oven. They will bake for about 2 hours. Then grate them and cook with all the vegetables already.)
  3. Squeeze the juice from the lemon and add 1 tbsp. spoon in a pan with beets. Add sugar and salt. We mix. Cover and simmer until tender, about 20 minutes.
  4. Onion cut into large cubes. We send the onion to the pan with vegetable oil. We are waiting for it to start to turn golden.
  5. We rub the carrots on a coarse grater.
  6. (If you decide to roast the beets in the oven, you can roast the carrots too, but they will cook much faster, in about 20 minutes.)
  7. As soon as the onion begins to turn golden, add carrots to it. Pour in a little oil, because the carrots will quickly absorb all the oil. Add bay leaf and allspice.
  8. We cut the pepper into cubes, but large or small - decide for yourself. When the carrots are half cooked, add the pepper and simmer until tender.
  9. When all the vegetables are cooked, especially the carrots, add the tomato paste. We mix.
  10. Add carrots, peppers and onions to the finished beets. We simmer everything together for a few more minutes on a small fire.
  11. Beet caviar is ready. We take out the bay leaf - and you can serve, if desired, sprinkled with herbs.
  12. Beet caviar can be eaten both hot and cold. Caviar is suitable both as a salad and as a spread on bread. Bon appetit!
