I present to you a delicious and original appetizer - canape sandwiches with herring salad, pickled cucumbers and boiled eggs.

Ingredients

  1. Prepare all ingredients. Boil the eggs in boiling water first.
  2. Cut pickled cucumbers and onions into small cubes and place in a deep bowl so that it is convenient to mix the salad with herring.
  3. Chop boiled eggs into small cubes.
  4. Carefully clean the herring fillet from large and small bones and also cut into cubes. Bones need to be given special attention - it is very unpleasant when bones come across in a herring snack. Add the herring to the bowl with the rest of the ingredients.
  5. Add mayonnaise, finely chopped green onions and mix the ingredients of the salad of eggs, cucumbers and herring.
  6. In a deep bowl, combine mustard, French mustard and olive oil.
  7. Beat with a fork until smooth, add apple cider vinegar to taste. Salt if necessary, but remember that herring and cucumbers contain salt.
  8. Add dressing to salad, stir.
  9. Use a cookie cutter to cut out circles or any other interesting geometric shapes for canapés from slices of rye bread.
  10. Place a tablespoon of fish salad on each sandwich.
  11. Garnish herring salad canapes with cranberries and green onions.
  12. Serve a snack plate to the table, and be sure that guests will not leave such a beautiful and tasty herring appetizer unattended!
