Chinese-style fried potatoes with vegetables are not only an appetizer, but also a hearty side dish. The addition of soy sauce, ginger, garlic and chili peppers give the dish a bright taste with a spicy spiciness.   1. Prepare food. Adjust the amount of hot pepper to your liking. I cook a slightly spicy version of the dish, so I add a small hot pepper (6-7 g).
  2. Peel the potatoes and grate into thin long sticks using a Korean carrot grater. Rinse the resulting potato straws under running water and place in a container with cold water for 20 minutes.
  3. Remove seeds from sweet peppers and hot peppers and cut into strips.
  4. Peel the onion and cut into thin half rings. Peel the ginger root and garlic cloves. Cut into small cubes.
  5. Heat vegetable oil in a skillet over high heat. Add chopped garlic, ginger and hot peppers. Fry everything for about 1 minute, until golden and a characteristic aroma appears.
  6. Add bell pepper, onion, sugar and a pinch of salt to the pan. Pour in the vinegar.
  7. Stir-fry the vegetables for 3 minutes.
  8. Drain potatoes, rinse thoroughly again and pat dry with paper towels.
  9. Add potatoes to skillet with vegetables. Stirring, fry for another 4 minutes over high heat.
  10. Add soy sauce and ground coriander.
  11. Fry for 2 more minutes over high heat.
  12. Reduce heat to low and cook, stirring occasionally, for about 15 minutes more, until potatoes are tender. If necessary, at the end of cooking, you can slightly salt the dish to taste.
  13. Place potatoes fried with pepper, ginger and garlic on a plate and serve as an appetizer or side dish. If desired, you can sprinkle the dish with a pinch of herbs as a decoration.
