Homemade ginger ale

  1. Mix in a 2 L saucepan. ginger, sugar and 0.5 tbsp. water and put on moderately high heat. Stir until sugar dissolves. Remove from heat, cover and let sit for 1 hour. Strain the syrup through a fine sieve over a bowl, pressing down on the mixture to squeeze out as much juice as possible. Cool quickly by placing in a bowl of ice and stirring, or refrigerate, uncovered, to cool down to at least room temperature (20 ° C-22 ° C). Using a funnel, pour the syrup into a clean 2 liter plastic bottle and add the yeast, lemon juice and remaining 7 tbsp. water. Close the bottle, shake gently to mix, and leave the bottle at room temperature for 48 hours. Then open and check the sparkling level. Once the ginger ale is carbonated enough, it is very important to refrigerate it. Store in the refrigerator for up to 2 weeks, opening the bottle at least once a day to release excess gas.
