Honey flip with coconut rum

Ingredients

  1. Separate the whites from the yolks. Beat the yolks with honey into a light fluffy mass. Whisk the whites separately into a firm foam. Bring the milk to a boil, but do not boil it.
  2. Add rum to the milk, pour the hot milk mixture in a thin stream into the egg and honey cream, whisking. Then, gently, in three steps, add the whipped egg whites, stirring from bottom to top with a silicone spatula.
  3. Pour the flip into heat-resistant cups or glasses, sprinkle with nutmeg and cinnamon. Serve immediately.
