The Egyptian drink "Khushaf", also known as "date milk", is a simple and deliciously tasty treat for children and adults. Prepared on the basis of dates boiled in milk until soft, the drink is obtained with natural sweetness and an incredibly appetizing creamy taste with caramel notes, reminiscent of creme brulee ice cream.

  1. Wash the dates, dry and peel them.
  2. Place the dates in a saucepan and cover with milk.
  3. Add a whisper of salt and bring the mixture to a boil over medium heat. When the milk comes to a boil, reduce heat to low and simmer the date milk drink for 5 minutes.
  4. Turn off the heat, add vanilla sugar to the drink. Taste and add sugar to taste if necessary.
  5. You can strain the khushaf by separating the pulp of the dates, or grind the dates with a blender for a thicker and more nutritious drink. Then chill until the date milk drink is ready. Store the khushaf in the refrigerator and serve chilled. Children can be offered a drink warm or at room temperature.
