Mint Ginger Lemonade

  1. 1. Wash the lemon, dry it, and carefully remove the zest, without affecting the white part.
  2. 2. Wash the ginger root, peel, and cut it into thin slices.
  3. 3. Put the lemon zest and ginger slices into a ladle, and add sugar. Boil 2 liters of filtered water. Pour the food into a ladle with 0.5 liters of boiling water, cover with a lid, and cook for 5 minutes. Turn off the heat and let it brew for 8-10 minutes. Cool the rest of the water to room temperature.
  4. 4. Strain the decoction of zest and ginger through a fine sieve. Let cool.
  5. 5. Squeeze juice from the lemon.
  6. 6. Wash the mint, pat dry, and chop coarsely. I have a mixture of different varieties of mint, lemon balm, and catnip.
  7. 7. Place the mint in a bowl and crush it with a wooden pestle.
  8. In a large jar or jug, combine water, ginger decoction, and zest with sugar, lemon juice, and mint. Stir and place in the refrigerator to cool and infuse for several hours.
  9. 8. Strain the finished lemonade through a fine sieve (with gauze). Pour into glasses, and add lemon slices, ice cubes, and fresh mint leaves to each glass.
