The heady taste of summer, the spectacular look ... This non-alcoholic cocktail has everything to become the highlight of the evening

  1. For syrup in a small saucepan, heat water and sugar, pounded in a mortar with lavender, over medium heat, 3-5 minutes. The sugar should melt completely. Remove from heat, cover and let it brew for 10 minutes. Strain the syrup and cool completely.
  2. Brew tea. Let it brew for 20-30 minutes. Strain.
  3. In a blender, combine the sugar syrup, tea, blackberries and lemon juice until smooth. Strain.
  4. Pour 200 ml of sparkling water into a large jug and add the prepared tea and berry mixture. Stir.
  5. Pour the puree into tall, pretty glasses or jars. Add a scoop of ice cream and pour the rest of the soda water on top. The water starts to foam, quickly decorate the drink with berries and serve immediately.
