  1. 1. Boil Tassay water.
  2. 2. Add sugar, cinnamon sticks, cardamom, and star anise to boiling water.
  3. 3. Add dried apples, cranberries, and kumquats. Leave to infuse for 30 minutes.
  4. 4. Squeeze juice from oranges, and add thyme.
  5. 5. Add orange slices to a jug, and pour black tea and honey.
  6. 6. Add fruit and berry infusion to the decanter and serve. When serving, you can add rum to taste.
