Pizza dough

Ingredients

Directions

  1. Soak the yeast for 15 minutes in a little water (from the recipe, do not add additional water) to "wake up". To increase the amount of gluten, a long kneading (at least 15 minutes) is very desirable, and it is better to do this in a food processor, and not with your hands (unless you are a professional massage therapist). Then cover with a damp cloth and allow to rise for half an hour.
  2. Then knead it well and continue the fermentation process again (covered with a damp cloth) for about 2 more hours. At this time, prepare the sauce and filling. The filling is to your taste. In this case, I had stewed vegetables - eggplants, peppers, herbs. Sauce: take 5 tomatoes, scald with boiling water and remove the skin. Chop finely and send to the pan to stew with salt and oregano (this is a real Italian sauce). It is advisable to evaporate as much liquid as possible.
  3. The dough that has come up cannot be rolled out with a rolling pin, so that fermented air bubbles do not come out - just knead it with your fingers. From this amount of dough, you can make 2 pizzas, 25 cm in diameter. When rolling, it is very good to sprinkle a little semolina on the table so that the dough does not stick to the baking sheet.
  4. Make small sides from the edges, grease the dough with sauce and lay out the filling. Sprinkle with Parmesan.
  5. The oven should be very well heated - not lower than 250 C. Before laying out the pizza, it is very desirable to heat the baking sheet (you have probably seen how pizzaiola is laid out semi-finished pizzas on hot iron sheets and placed in the oven. The baking sheet should be thin so that it can heat up instantly It is very good to have a baking tray with holes for baking pizzas to prevent the base from getting soaked. Bake the pizza for 5-7 minutes (the guideline - the cheese starts to bubble, and its color changes). Take out, cool a little and eat!
