Pizzas are small, portioned pizzas. Grape and goat cheese pizzas are prepared quickly and with a minimum of ingredients. All you need is pizza dough (you can make it ahead of time and freeze it), grapes, cheese, olive oil and rosemary. And the fastest version of such pizzas can be prepared on flat cakes or round pita bread. Heat the bread in the oven or on the grill for 2-3 minutes, then add the filling and send it under the grill for another 5 minutes.

  1. Combine all dough ingredients and knead to a smooth, elastic dough. Let it sit for 40-50 minutes. Separate half of the dough and freeze for later. From the rest, form balls of 60 g each (enough for 6 pizzas), put on a baking sheet sprinkled with flour, cover with foil and leave overnight in a warm room without drafts. Roll out the matched dough into circles with a diameter of 12 cm.
  2. Wash the grapes, dry them, cut them in half and remove the seeds. Place the grapes in a bowl, add the rosemary, 1 tbsp. olive oil, stir and set aside while you cook the rest.
  3. Preheat the grill grate. Or put the baking sheet in the oven and preheat the oven to 250 C (or even more, if the oven allows).
  4. If using an oven, place the pizzas on a greased baking sheet and bake for 6 minutes. It will take about the same time to prepare the grilled pizzas. Place the oiled mugs on the grill with a brush, turn over after 3-4 minutes and continue cooking for another 3 minutes.
  5. Place the goat cheese on the pizza and smooth with the back of a spoon, spread out the grapes. Drizzle with olive oil. Place in the oven under the grill or grill under the lid for 5 minutes.
